Shay Cooper, Bingham’s Executive Chef, from Cheshire. Shay trained at Paul Heathcotes school of excellence, in Manchester from 1997.
He rose quickly up the ranks in posts at Michelin Starred restaurants, including Putney Bridge, Juniper in Altrincham, and The Vineyard at Stockcross.
His most recent post had been as Head Chef in Olga Polizzi’s hotel Endsleigh in Devon, where he was awarded three AA rosettes.
