Shay Cooper, the Bingham’s Executive Chef constantly drives himself and small team, to deliver exceptional Modern British Food with European influences, but firmly focused on using the best quality local, seasonal, sustainable British ingredients.
Shay who is from Cheshire, began his career at Paul Heathcotes school of excellence, in Manchester from 1997.
He rose quickly up the ranks in posts at Michelin Starred restaurants, including Putney Bridge, Juniper in Altrincham, and The Vineyard at Stockcross. Prior to the Bingham he had been Head Chef in Olga Polizzi’s hotel Endsleigh in Devon, where he was awarded three AA rosettes. Shay was awarded the Hotel Catey for best Chef (under 250 covers) in 2010.
